Cranachan Recipe

Yields: 4 servings Prep time: 15 minutes  

Ingredients:

  • 1/4 cup (55g) steel-cut oats  
  • 1 1/2 cups (250g) fresh raspberries, divided  
  • 2 cups (475ml) heavy cream  
  • 3 tablespoons malt whisky (optional)  
  • 1 tablespoon honey, plus extra for serving (optional)  

Instructions:

  1. Toast the oats: In a dry skillet over medium heat, toast the oats until lightly golden brown, stirring frequently to prevent burning. Set aside to cool.
  2. Prepare the raspberries: In a medium bowl, crush about half of the raspberries with a fork. Set aside.  
  3. Whip the cream: In a large bowl, whip the heavy cream and whisky (if using) until stiff peaks form. Gently fold in the honey.  
  4. Assemble the Cranachan: In individual serving bowls, layer the crushed raspberries, toasted oats, and whipped cream. Top with the remaining whole raspberries and a drizzle of honey, if desired.
  5. Serve immediately.

Tips:

  • For a richer flavour, use Scottish heather honey.
  • If you don’t have malt whisky, you can use another type of whisky or omit it altogether.
  • For a more intense raspberry flavour, buy local raspberries.
