Blue Lady & Linden Honey — Tea Pairing No. 2
Blue Lady already arrives with a bright citrus lift — rose, grapefruit and fine Chinese black tea, hand-crafted in Edinburgh by PekoeTea. What Linden Honey does is take that brightness and deepen it. Harvested from the blossoms of Linden trees and long prized across Eastern Europe, this honey is lighter than it looks — herbal, gently citrusy, with hints that some describe as minty or balsamic. Stirred in as the tea cools, it melts into the cup and pulls everything into focus: the floral notes sharpen, the citrus edge brightens, and the whole thing becomes something fresh, fragrant and quietly brilliant.
